The unusual food product could soon be on the tables of the US military as Congress has proposed in the annual defense legislation that the Department of Defense buy bison meat from local aboriginal tribes or such organizations.
Congressmen have passed their version of the $840 billion Defense Bill, with a series of amendments including the procurement of bison meat to eat.
If it passes, the Pentagon will begin “increasing bison meat processing … by integrating at least one ton per year” to promote bison meat as a healthy food source originating from Native American agricultural crops.
The amendment was introduced by Democrat Ruben Gallego, of Arizona, who hailed it as an opportunity to expand cooperation with local aboriginal communities on protein-packed food.
According to estimates there are about 3,500 bison in Yellowstone National Park alone, which is the largest in the world, and a total of about 400,000 in North America.
About 30,000 bison have been slaughtered for food this year in the US and about 100,000 kg of bison meat has been imported from Canada.
